Instant Pot Rosemary White Beans (Zoe's Kitchen Copycat Recipe)

One of the best side dishes from Zoe’s Kitchen (an amazing fast-casual Mediterranean food chain) are their braised white beans! Gosh, they’re good. Infused with rosemary, garlic, and oregano, these beans taste like they’ve been stewed for hours and hours. They’re deliciously comforting and filling, and I’m please to share my Instant Pot copycat recipe version with you.

It’s perfect for times like these when we are pantry cooking and need to feed the family on a budget or batch cook for quick reheatable meals. They’re naturally gluten-free and done in just about 20 minutes. Serve with a protein like a soft boiled egg or some sardines and a side of veggies and you’ve got yourself a pretty darn wholesome meal. Garnish with a squeeze of lemon and some zest and some pickled veggies and you fancy! Instant Pot Braised Rosemary White Beans Recipe

Ingredients (4 servings):

  • 2 cans white beans, drained and rinsed

  • 1 medium sized onion, diced

  • 2-3 fresh rosemary sprigs OR 1 Tbsp dried rosemary

  • 1 Tbsp garlic powder OR 2 cloves fresh garlic, minced

  • 1 bay leaf

  • 1/2 Tbsp oregano, dried or fresh

  • 1/2 Tbsp crushed red pepper

  • 1 Tbsp olive oil

  • 1.5 cup of bone broth or vegetable stock

  • Salt + pepper to taste

Method:

  1. Turn the sauté function on the Instant Pot. When the screen says “HOT” after a couple of minutes, pour in the olive oil, onion, oregano, bay leaf, rosemary, garlic, and crushed red pepper and sauté altogether for 1 minute.

  2. Dump in the beans and stock. Place the lid on, and using the bean/chili function, set it on manual low for 10 minutes. This will yield a brothy bean with the beans more intact. If you like the beans to be a little soupier and thicker, you can set it for manual high for 15 minutes and do natural release. Serve up and garnish as you please.
